The Oak Tree Inn is hiring a new Head Chef. We are a rural pub on the shores of Loch Lomond with accommodation for over 80 guests, serving up to a thousand covers a day in our bar and restaurant. The core menu is contemporary Scottish pub food (incorporating vegetarian and vegan offerings) augmented by a specials menu to reflect seasonality and the skills of the chefs we have at the time. In Balmaha we also have St Mocha Coffee Shop and Ice Cream Parlour, a Village shop, along with other businesses outside Balmaha either operating or in the process of development. We are building a centralised prep kitchen in Balmaha to support our expanding group of outlets; we also make our own ice cream and roast our own coffee. The overall brand is all about quality.
You will be leading a team and need to be able to provide high quality and absolute consistency in the core menu and flare and competence on the specials menu. You will need to be efficient at running a busy pass, providing on the job training for less experienced staff, maintaining high quality output and applying rigorous standards of hygiene and overall compliance. You will be expected to run the kitchen within budget and strive for efficiencies but not at the cost of quality. There is a well established and very competent Sous Chef to assist you and we are aiming to achieve a 4 on 3 off rota. There is considerable opportunity to grow and develop within the company in the future. The position is well paid, staff accommodation is available and there is access to outdoor activities.
